Here we go! I have been a vegetarian since June 15th to be exact! So far, I honestly have not felt a need for meat. I have definitely had to remind myself “Uh Kelli remember you arent eating that” when I go looking at a menu or a lunch buffet at work lol. I can’t say that I feel any different as of now, but I hope that the week to come will be my changer. Workouts begin tomorrow morning at 6am! I did not really do much this week in the gym. I have decided my meals this week will be:
Breakfast – 7:30am
2 egg muffins (I made these with spinach, eggs, and bell pepper in a muffin pan at 350 degrees for 20-30 minutes)
1/2 cup of oatmeal
1 green apple sliced
Snack – 10:30am
Protein shake (with water only)
7-10 almonds
Lunch – 1:30pm
I cooked a spinach (recipe says broccoli but I preferred spinach) and quinoa casserole with cheese and organic mushroom gravy. I used unsweetened almond milk and olive oil where recipe calls for other ingredients as well. This will be my lunch for the week. I doubled the recipe so it would last till Friday. I will share the recipe here:
Snack – 4:30pm
Hummus with 6 baby carrots
Dinner – 7:30pm
Salad with spinach, cucumbers, & eggs with apple cider vinegar
I plan to run after work (remember 3 miles a day 6 days a week) so I will have a protein shake after my run for muscle recovery mainly. Other than that, my 7:30 meal will be my last meal of the night and I will drink water until bed. With this routine, I really want to be in bed by 11pm every night so that I am getting enough rest to get up at 5:15am the next morning not feeling sleep deprived. Along with my diet, I am doing 1 gallon (128oz) of water a day as well.
And of course, with this new routine and way of life come good ole progress pics! Now I know it has been a minute since you all have seen progress pics…I had to prepare myself for what I would see lol. With my New Orleans eating and drinking I got back up to 155lbs. Now last time I did progress pics I was 147lbs I believe. To me 5lbs will come off easy with some structure and workout, so I am not really worried about it. Plus I carry my weight SO MUCH differently than before. Either way here goes! Let’s see what next week brings!
